Dünya küçük bir köye dönüştüğü için en ücra yerde gerçekleşen bir olay çoğu işletmeyi etkilemektedir. Yaşanan doğal afetler, pandemi gibi durumlar, bu duruma örnek verilebilir. Yaşanan bu olumsuz olaylar, işletmeleri mal ve hizmet tedarikinde zora sokmaktadır. İşletmeler ise tedarik zinciri yönetimini iyileştirmek için her türlü risk faktörünü göz önünde bulundurarak muhtemel senaryolar geliştirmelidir. Bu durum işletmelere, en az hasarla faaliyetlerini yönetebilmelerini, arz- talep arasındaki gecikmeyi olabilecek en minimum seviyede tutarak müşteriye en hızlı şekilde cevap vermeyi ve bunu yaparken de tedarik zincirini en doğru şekilde yönetip, gereken hammadde ve malzemeyi hızlı bir biçimde ve düşük maliyetle tedarik edebilme fırsatını sağlar. Tedarik zinciri yönetimi doğal ve insan kaynaklı birçok yıkımdan ve yıkımın önem boyutuna göre etkilenmektedir. Geçmişte ve günümüzde yaşanmış ve etkisi devam eden bu gibi yıkım ve felaketten tedarik zincirinde doğru ve planlı yönetimin önemini de ortaya koymuştur. 2019 yılında Çin'de ortaya çıkan korona virüs salgını ile tedarik zinciri yönetiminin önemi daha net bir biçimde anlaşılmıştır. COVID-19 ile ülkelerin kendi içlerine kapanması ve sınırlarını kapatması, şehirlerarası kısıtlamaların gelmesi tedarik zincirinde ciddi aksamalara neden olmuştur. Bu ise üretimin gecikmesine veya durma noktasına gelmesine, talebin karşılanamamasına ve üretim maliyetlerin artışına yol açmıştır. Pandemiden kaynaklanan tedarik zinciri aksaklıklarının oluşturduğu sorunlardan yola çıkarak bu çalışma, pandemi döneminde gıda sektörü alanında yaşanan tedarik zincirinden kaynaklı aksaklıkların, üretim maliyetleri üzerindeki etkisinin ne yönde olduğunu araştırmaktadır. Bu çalışmanın amacı; gıda sektörü alanında faaliyet gösteren Kayseri Şeker Fabrikası'nın pandemi döneminde şeker üretiminde yaşadığı tedarikten kaynaklanan aksaklıkların üretim maliyetlerine etkisini incelemektir.In the globalizing world, large enterprises continue their activities in an integrated manner. This situation provides businesses with the opportunity to manage their activities with the least damage, to respond to customers as quickly as possible by keeping the delay between supply and demand at the minimum level possible, and to manage the supply chain in the most accurate way while supplying the necessary raw materials and supplies quickly and at low cost. Supply chain management is affected by many natural and man-made disasters and the extent of the disaster. Such disasters and catastrophes that have occurred in the past and today and continue to have an impact have also revealed the importance of proper and planned management in the supply chain. The importance of supply chain management was understood more clearly with the coronavirus case that emerged in Wuhan, China in 2019. With COVID-19, countries have closed themselves and closed their borders, and intercity restrictions have caused serious disruptions in the supply chain. This has led to production delays or halts, demand not being met, and production costs increasing. Based on the problems caused by supply chain disruptions caused by the pandemic, this study investigates the impact of supply chain disruptions experienced in the food industry during the pandemic period on production costs.
